These chewy chocolate granola bars are filling and easy to throw together. Made with peanut butter, almonds, and coconut, they are also no bake!
I’m always on the hunt for easy snacks to have throughout the week. Snacking is a big part of my life (totally normal) and I’m well aware what happens if I’m hungry and there’s no food in sight: hanger. And no one likes to be around that.
Enter these granola bars. They keep the hanger at bay and keep me full if it’s going to be a while until I can have a real meal. Made with whole ingredients and naturally sweet, these chewy granola bars won’t fall apart and can satisfy an afternoon chocolate craving.
These chocolate granola bars are super easy to throw together on Sunday and have throughout the week. Most if not all of the ingredients you probably already have in your pantry. Oats, cocoa powder, almonds, and coconut held together with melted peanut butter and coconut oil and sweetened with just a bit of honey. I also like to add a little instant coffee powder for a more interesting flavor profile, but feel free to leave it out if you want.
How to Make Chewy Granola Bars
Mix all the dry ingredients in a large bowl and set aside. I highly recommend toasting the almonds and shredded coconut for added flavor and crunch. In a microwave safe bowl, add the coconut oil, honey, and peanut butter. Microwave the mixture in increments until it’s smooth and creamy. Microwaving the wet ingredients is key to get these bars to stay together and stay soft and chewy.
Combine the wet ingredients into the dry and mix well. Press the mixture firmly into a loaf pan lined with parchment paper. Use the back of a spatula to help really press the mixture down. Refrigerate the bars for at least an hour, then cut into 8 bars. They are best kept in the fridge, though I’ve taken mine to work and had it in the afternoon and they have still held up fine.
These chewy granola bars have a little bit of everything going on: crunch from the almonds and coconut, a chocolate kick, a hint of sweetness from honey, and they stay nice and soft thanks to coconut oil and peanut butter. Try them this weekend and let me know what you think!
Chocolate Coconut Granola Bars
These bars are a great snack option and will keep the hanger at bay until your next meal. Prep them on Sunday and have to go snacks all week!
- 2 cup oats old fashioned/rolled
- 2 tbsp cocoa powder
- 2 tbsp hemp or flax seeds
- 1 tsp instant coffee powder optional
- 1/2 tsp salt
- 1/2 cup almond slivers
- 1/2 cup unsweetened flaked coconut
- 3 tbsp coconut oil
- 3 tbsp honey
- 1/2 cup peanut butter
Toast the 1/2 cup almonds and 1/2 cup coconut together until lightly golden brown. Watch them closely as they can burn quickly.
Mix all the dry ingredients in a large bowl: 2 cups oats, 2 tbsp hemp or flax seeds, 1 tsp instant coffee if using, 1/2 tsp salt, and the toasted almonds and coconut.
In a microwave safe bowl, add 3 tbsp coconut oil, 3 tbsp, honey, and 1/2 cup peanut butter. Microwave for 30 seconds and stir to combine. Microwave in 20 second increments until the oil is melted and the mixture is smooth and creamy. Add the vanilla extract.
Pour the wet ingredients into the dry ingredients and mix well to combine. Line a 9x5 loaf pan with parchment paper, leaving some hanging over the sides for easy removal.
Press the mixture firmly into the loaf pan. I like to use the back of a spatula to really get everything squished down, this is super important so the bars stay together.
Refrigerate for at least an hour, then remove the parchment paper and cut into 8 bars. Wrap individually and enjoy all week!
- Feel free to use some substitutions here depending on what you have in your pantry. I prefer these with peanut butter and honey, but almond butter and/or maple syrup would definitely still work.
