This simple side salad is the perfect accompaniment to just about any meal. Made with a few simple ingredients and a delicious dressing, it’s super quick to toss together!
Alright guys, we’re back after a little hiatus due to some real job responsibilities. This salad is almost too easy that I didn’t want to even post it, but the flavor combinations were too delicious that I couldn’t not share it. This is a really simple salad that would go perfect as an easy side when you feel like you need something green to go with a giant bowl of pasta.
The base is just a blend of spinach and arugula, then we add in sliced apples, toasted walnuts, and blue cheese. This past year I started loving blue cheese, but if it’s not your favorite feel free to use feta or goat. What really brings this salad together is the dressing.
How to Make Simple Honey Mustard Dressing
I don’t know about you, but a lot of salad dressings seem to be mostly olive oil and very little everything else. I need more of the flavor and less of the oil, and that’s exactly what this dressing accomplishes. Simply mix together equal parts olive oil, apple cider vinegar, honey, and Dijon mustard. The equal ratios of each ingredient really makes this dressing shine. No one part is overpowering, and it complements the apples and blue cheese wonderfully.
What to serve with a side salad:
I like to whip this up as a side when I’m having something slightly more indulgent as a main dish. Cheesy pastas, burgers, frozen pizza…anything that may be lacking in the greens and veggies department.
And that’s literally it, so easy you can barely call it a recipe. But sometimes that’s just the kind of thing you need for an easy side dish. If you want to round this out to a full meal, mix in shredded chicken and quinoa or couscous.
If I happen to have a ripe avocado on hand I’ll usually add that in for some more healthy fats and staying power, but the salad as is is very easy to whip up with pantry staples!
Another great thing about this salad is that it’s easily scalable, so you can make it for a crowd or for yourself on a Friday night with a glass of wine (<–my ideal situation).
A note about the nutritional information: At first glance it may seem extreme for this simple salad to have 400 calories and all that fat content! A lot of this comes from the walnuts. They are on the “healthy” side of fats, and do have more staying power than empty processed calories. If you’d like to limit these amounts though, simply use fewer walnuts and a little less cheese.
The Easiest Side Salad
Five ingredients, plus a knockout dressing, this simple salad recipe will be your new go-to for whipping up as a side to pasta, burgers, or simply on its own.
- 2 cups spinach & arugula aka two good size handfuls!
- 1 sliced apple recommend galas or fugis
- 1/2 cup walnuts toasted
- 2 oz Crumbled blue cheese
Honey Mustard Dressing
- 1 tbsp extra virgin olive oil
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tbsp dijon mustard
Mix all the dressing ingredients together, then assemble your salads. If you like a lot of dressing, feel free to double/triple/etc. the amounts, just stick with the same 1:1 ratios.
- These are just rough estimates for the salad ingredients, feel free to use more if you want a bigger salad, or less if you want a smaller one! The important part here is the combination of all these flavors together.
- Goat cheese or feta would also work here, as well as pecans instead of walnuts. I personally think the apples + walnuts + blue cheese is the best combo, but feel free to experiment!
